The man that walked down the middle of the road beckoned me to join him.

This is a good start to the use of relative clauses, James. You’ve correctly combined two sentences into a complex sentence. I like how you’ve developed an original use of the original sentences rather than just going with the solution everyone else used.
Whenever you’re referring to a person you must use the pronoun “who” or “whose”. “Which” or “that” are for places and things. What it also needs now is commas to show where the relative clause is – it should read like this:
“The man, who was humming to himself, walked down the middle of the road.”
